Caldo Verde Instant Pot recipe
This Portuguese soup was introduced to me by my boyfriend. He has fond memories of his grandmother making it for him as a child. Caldo Verde literally means “green broth” in Portuguese and originated from Northern Portugal.
This is a simple, wholesome, satisfying soup that will fill you up!
Ingredients:
- 1 pound of kale, stemmed removed, thinly sliced
- 1 large onion
- 2 garlic cloves, diced
- 6 medium potatoes. Peeled and chopped
- 8 cups of chicken broth
- olive oil ¼ cup
- linguica, Portuguese sausage
In the Instant Pot, pour olive oil, then add potatoes, onion, garlic and broth. Pressure cook for 15 minutes. After the 15 minutes, cancel and do a manual quick release. Now you can add the potatoes and pulled apart kale. Seal the lid and pressure cook for 10 minutes. We use an emulsion blender to liquify everything in the Instant Pot.
While the soup is in the Instant Pot, you can cut up the sausage to heat it up on a frying pan. Once the Instant Pot is ready, serve yourself some soup. Top it off with the tasty sausage.
This broth has naturally creamy texture that provides comfort and warmth. Caldo Verde is a perfect example healthy of Portuguese food. The ingredients are few while the taste is bold!
